Preheat the broiler, oven or grill to medium-high heat.
Toast the bread until it’s lightly golden brown on both sides. The bread needs to be crisp but tender on the inside. Do not let the bread get brittle. Dollop some ricotta onto each slice of toast and drizzle a little bit of honey on it. Afterwards zest the orange over the tops. Then scatter the hazelnuts on top and put a wedge of fruit on top of each piece of toast, then finish with another drizzle of honey.
